Ingredients
- 1 (15 oz) cans black beans, rinsed and drained
- 1 (14 1/2 oz) no salt added whole tomatoes, chopped
- 1 (14 1/2 oz) diced tomatoes with green chilies
- 1 (14 1/2 oz) fat free lower sodium chicken broth
- 2 (4 oz) whole green chilies, drained and chopped
- 1 1/2 c. frozen corn
- 4 green onions, thinly sliced
- 3 t. chili powder
- 2 t. cumin
- 1 t. minced garlic
- light or no fat sour cream
- colby-jack reduced fat shredded cheese
- baked tortilla chips
Preparation
Step 1
Place all soup ingredients in slow cooker. Cover and cook on low for 7 to 9 hours.
Ladle into bowls. Dollop with 1 T. sour cream. Sprinkle 1 T. shredded cheese over all and crush 4 chips on top.
