Asian Peanut Noodle Salad

Ingredients

  • 1 English cucumber
  • 1 ripe avocado
  • 2 scallions
  • 8 oz. dried soba noodles
  • 1/4 c creamy peanut butter
  • 1/2 c warm water
  • 2 T low sodium soy sauce
  • 2 T toasted sesame oil
  • 3 T rice vinegar
  • Sriracha
  • 1/2-1 lime
  • Cilantro sprigs, for garnish
  • 2-3 T roasted sesame seeds for garnish.

Preparation

Step 1

Boil noodles according to directions.

Peel cuke if desired and cut in 1/2 moons. Cut avocado in half and use half chopped in the salad.

Transfer drained, cooled noodles to a bowl.

Whisk the PB and water together, blending well. Add soy, sesame oil, vinegar and Sriracha to taste, while whisking to form a smooth dressing.Then squeeze 1-2 T of lime juice.

Pour 2/3 of dressing ove noodles, using tongs to toss and coat. Add scallions and toss to incorporate. Add some of all remaining dressing to taste.

Transer to a serving bowl, top w/cukes, avocado, cilantro & sesame seeds.
