Tex-Mex Corn Chowder

Ingredients

  • 15 oz whole kernel corn (with liquid)
  • 15 oz cream style corn
  • 15 oz diced tomatoes with garlic and onion
  • 15 oz black or red kidney beans, rinsed and drained
  • 1/2 c. vegetable broth

Preparation

Step 1

Combine everything in a medium saucepan. Bring to a boil; reduce heat and simmer covered for 5 minutes. If desired, sprinkle each serving with shredded low-fat cheese or chopped fresh chili peppers and garnish with fresh cilantro.
