Creole Jambalaya

Ingredients

  • 1 C chopped onion
  • 1 C green bell pepper, chopped
  • 1 C chopped celery
  • 3 cloves finely chopped garlic
  • 1 (23 oz) can undrained diced tomatoes
  • 2 C fully cooked smoked sausage, chopped
  • 1/2 tsp parsley flakes
  • 1/2 tsp salt
  • 1/4 tsp red pepper sauce
  • 1/4 tsp dried thyme leaves
  • 3/4 lb uncooked peeled deveined med. shrimp, thawed
  • 4 cups hot cooked rice

Directions

Mix all ingredients, except shrimp and rice in 3 1/2 - 6 qt. slow cooker. Cover and cook on low 7-8 hrs or until vegetables are tender. Stir in shrimp. Cover and cook on low about 30 min. or until shrimp are pink and firm. Serve with rice.

Yield: 8 servings.
