Ingredients
- 2 small red sweet peppers
- 1 tbls olive oil
- 2 tbls purchased or homemade basil pesto
- 2 ozs provolone cheese, cut into 8 wedges or slices
Preparation
Step 1
Quarter sweet peppers, lengthwise, remove seeds and membrances. Brush outside of pepper quarters lightly with oil. Spread insides with pesto, top with cheese.
For gas grill, preheat grill. Reduce heat to medium. Place sweet pepper quarters on grill rack over heat. Cover and grill for 5-7 minutes or until bottoms are lightly charred and cheese is softened.
Makes 8 appetizer servings.
