Ingredients
- 8 large eggs
- 2 tablespoons heavy cream
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon extra virgin olive oil
- 1/2 cup fresh corn kernels (from 1 ear)
- 4 ounces smoked salmon, cut into strips
- 1/2 cup halved cherry tomatoes
- 1 tablespoon fresh dill, chopped

Step 1
In a large bowl, whisk together the eggs, cream, salt and pepper.
In a large skillet, over medium low, heat the oil. Pour in the egg mixture and begin to scramble, gently pushing the eggs around the pan with a spatula, about 1 minute.
Add the corn and cook until the eggs are nearly done, 1 to 2 more minutes and fold in the smoked salmon and tomatoes.
Remove the pan from the heat, and allow the residual heat to warm the salmon and tomatoes through.Sprinkle dill on top and serve immediately.
