  • 8 oz. pkg. cream cheese
  • 1/4 cup confectioners' sugar
  • 2 1/2 cups AP flour
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1 1/4 cups milk
  • 1/2 cup brown sugar
  • 1/3 cup butter, melted
  • 1 tsp. grated lemon zest
  • 1/4 tsp. vanilla extract
  • 1/4 cup strawberry jam

Step 1

Preheat oven to 375. Line 12 muffin tins with paper muffin liners.
Beat together cream cheese and confectioners' sugar until smooth; set aside for filling.
In a large mixing bowl, combine AP flour, baking powder and salt. In a separate small bowl, beat together egg thru vanilla extract. Stir egg mixture into dry ingredients, stirring just until moistened.
Spoon half of batter into muffin cups - fill less than half full. Top each with 1 tbsp. cream cheese mix and 1 tsp. jam. Spoon remaining muffin batter on top. Try to keep cheese mix and jam in cups - it tends to rise and come out of cups as the batter cooks.
Bake in preheated oven for 20 min., or until golden. Cool in pan for 5 min., then remove muffins and cool on rack.
