Sallys Green Beans

Ingredients

  • 2 Tabl. Olive oil
  • 1/2 inch of Ginger, peeled, cubed and shredded
  • 1/2 Tabl. Mustard Seeds
  • 1 pound green beans
  • 1/4 cup water
  • 1/2 teas. ground cumin
  • 1/4 teas. turmeric
  • 1 teas. salt
  • Juice of 1 Lemon
  • 2 Tabl. minced calantro

Preparation

Step 1

Saute Mustard seeds and ginger in olive oil over med. heat until seeds start to pop. Add beans and stir for 5 minutes. Add water and cover and simmer for an additional 5 minutes. Remove lid when much of the water is gone. Add cumin, turmeric and salt and stir for a minute Take off burner and add lemon juice. When ready to serve sprinkle with calantro.
