Ingredients
- 1 large sweet potato, rinsed, scrubbed, and patted dry
- 1/2 pound ground beef (the leaner the better)
- 1/4 cup onion, chopped
- 1/2 cup tomato sauce
- 1 (8.75-ounce) can whole kernel corn, drained
- dash each of ground allspice, nutmeg, and cinnamon
- 1 tablespoon milk
- 1 tablespoon butter
- salt and pepper to taste

Directions: Preheat oven to 400 degrees. Using a fork, pierce holes allover potato, place on baking sheet, and bake for about 45 minutes, or until potato is tender. In the meantime, in a large skillet, cook beef and onion over medium heat until beef is browned. Drain beef and onion mixture, return to skillet, and add tomato sauce, corn, and spices. Mix until combined, add to greased baking dish, and set aside. Once potato is done, removed from oven and let cool. Preheat oven to 350 degrees. Once potato is cooled off enough to touch, cut in half. Using a spoon, scoop out potato pulp and put in small bowl. Add milk, butter, salt, and pepper—adding more of each if needed for taste—and mash together until the big chunks are gone. Spread potato mixture over beef mixture in baking dish, and bake for about 30 minutes.
