Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 1 eggs
- 1 tsp. vanilla
- 1 1/3 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup cocoa
- 1/2 cup milk
- 1 1/2 tsp. instant coffee
Preparation
Step 1
Cream shortening and sugar till light. Add egg and vanilla. Sift together the next 5 ingredients. Add to creamed mixture alternately with milk, beating after each addition. Dissolve coffee powder in 1/2 cup hot water, stir into batter. Fill paper baking cups in muffins 2/3 full. Bake in moderate oven 375 F for 20 minutes. Cool and frost. Makes about 18 cupcakes
