Ingredients

  • lb sweet potato diced

  • 1

    tbs melted butter

  • oz demerara sugar

  • 3

    eggs

  • 3

    tbs skimmed milk

  • 1

    tbs lemon juice

  • grated rind of 1 lemon

  • 1

    tsp caraway seed

  • oz of dried fruit, such as apple, pear, mango, raisins, chopped

  • 2

    tsp baking powder

Directions

Preheat oven to 325 degrees 1. Lightly grease a 7-8 in square pan 2. Cook the sweet potatoes in boiling water for 10 min or until soft, drain and mash until smooth. 3. Put the mashed sweet potatoes into a mixing bowl and add butter and sugar, mixing to dissolve. 4. Beat in the eggs, lemon juice, rind, caraway seeds and dried fruit. Add baking powder and mix well. 5. Pour mixture into a prepared bake pan. 6. Bake for 1 to 1 1/2 hours until cooked through 7. Remove cake from pan and put on wire rack to cool. Cut into square slices. You can use pumpkin instead of sweet potato
