Pork chop, apple and sweet potato casserole

  • 1 1/2 lbs (2-3med) sweet potatoes, sliced
  • 1 tbsp butter
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 medium fresh raw apples
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/2 tsp grated lemon peel
  • 2 tsp fresh lemon juice
  • 2 tbsp hot water
  • 4 pork chops



Step 1

Peel and slice sweet potatoes 1/4 thick place in buttered shallow 8" baking dish. Pat w/butter and sprinkle w/salt and pepper. Peel,slice and core apples. Arrange over sweet potatoes. Combine brown sugar, cinnamon and lemon peel. Scatter over apples. Add lemon juice and water, too w/ pork chops. Cover. Bake in preheated 359 oven for 1 1/2 hours or until pork chops are tender. Remove cover last 30 minutes to brown chops, turning to each side.
