  • 2 TB oil
  • 2 large leeks, white part only, diced
  • 2 large onions
  • 8-12 med potatoes
  • 2 carrots
  • 2 TB parsley
  • 1 tsp dill
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper
  • 8 C parve stock

Preparation

Step 1

1. sautee leeks and onion until soft. Add rest of ingredients.

2. Cook with lid cracked, approx. 1 1/2 hours. Cool. Use immersion blender.
