Miggie's Shortbread Cookies

Ingredients

  • 1 cup plus 2 tbsp. sugar
  • 1 cup (2 sticks) unsalted butter, room temp
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1/4 tsp salt
  • Assorted decorations (such as colored sugar, and chocolate and rainbow sprinkles)

Preparation

Step 1

using electric mixer, beat sugar and butter in a large bowl until well blended. beat in yolk and vanilla. add flour and salt, mix just until combined. gather dough into ball; divide in half. flatten each into disk. wrap in plastic; chill until firm, at least 1 hour. (can be made 1 day ahead. keep chilled. let soften slightly before continuing).

Pre heat oven to 325. roll out each dough disk on lightly floured surface to 1/4 inch thickness. cut out cookies, using assorted Christmas cookie cutters. place on heavy large baking sheets. decorate with assorted toppings.

bake cookies until beginning to brown around edges, about 10mins. let cool on sheets 1 min. using metal spatula, transfer cookies to racks and cool (can be prepared 3 days ahead. store cookies in single layers between sheets of waxed paper in airtight containers.).
