Chicken in Cornflakes

This is one of my Mother's (Jeannette Costigan's) recipes.

Ingredients

  • Cut up chicken in serving pieces and roll in vegetable oil. Sprinkle with salt and paprika.
  • Lightly crush cornflakes with rolling pin and roll chicken in flakes.
  • Place in oven and bake at 450° for 15 minutes. Reduce heat to 325° and bake an additional 30 minutes or until done.
