Tomato Sauce ( fresh tomatoes)

  • salt
  • pepper
  • olive oil
  • onions
  • green peppers
  • jalepeno peppers (optional)
  • garlic
  • basil
  • tomato paste
  • oregano
  • sugar



Step 1

Quarter tomatoes and put on cookie sheet
Roast tomatoes with olive oil, salt and black pepper 20 to 30 minutes
Saute onions, green peppers, jalepeno peppers and garlic
After tomatoes are roasted, puree tomatoes and add to onion mixture
Add basil, tomato paste, oregano and little sugar
Simmer for 30 minutes to thicken
Then add to hot jars and hot lids
