Squash, Sweet Potato, Carrot and White Bean Soup - Slow Cooker

Ingredients

  • 1 TBS 1 TBS olive oil
  • 1 1 onion
  • 6 cups 6 cups veggie broth
  • 1/2 1/2 butternut squash, peeled, seeded and cubed (about 2 1/2 cups)
  • 1 1 sweet potato, peeled and diced (about 1 1/2 cups)
  • 3 3 carrots, peeled and sliced
  • 1 can 1 can cannellini beans
  • 1/4 tsp 1/4 tsp salt

Preparation

Step 1

1) Add all ingredients to the slow cooker and secure the lid.

2) Turn it on low and leave for 6 hrs (or 3 hrs on high).

3) Use an immersion blender to make a smoother texture and enjoy!
