Chicken Tortellini Soup

Ingredients
- 2 Tblsp. olive oil
- 1 c. finely chopped onion
- 3 medium size garlic cloves, minced
- 8 c. low-sodium chicken broth
- 1 28oz. can crushed tomatoes
- 2 tsp. dried Italian seasoning
- 4 c. shredded roast chicken
- 1 9oz. pkg. fresh cheese tortellini
- salt and ground black pepper
- 1 5oz. pkg. baby spinach, stems removed
- 4 oz. shredded or grated Parmesan cheese

Preparation
Step 1
Place olive oil in large, heavy soup pot over medium heat. Add onion and garlic, reduce heat to medium-low and cook, stirring until soft, 3-4 minutes. Stir in chicken broth, tomatoes and Italian seasoning. Cover pot and let simmer until flavors develop, about 10 minutes.
Stir in chicken and tortellini and season with salt and pepper to taste. Let soup simmer, uncovered until tortellini has cooked, 7-8 minutes. Add spinach and cook, stirring, until wilted, 1-2 minutes.
Garnish servings with Parmesan to serve.
