Asparagus Roll Ups

Ingredients
- 1 (10 oz) package frozen asparagus spears or use fresh asparagus
- 20 slices thin white bread, crusts removed
- 8 ounces cream cheese, softened
- 1 egg
- 3 ounces freshly grated parmesan cheese
- 1 cup melted butter

Step 1
Cook the asparagus according to the package directions and drain. flatten each piece of bread with a rolling pin. Beat the cream cheese, egg and parmesean cheese in a mixing bowl until smooth. Spread on each bread slice. Arrange one asparagus spear on each bread slice and roll up tightly. Secure with toothpicks if needed. Dip each roll into the melted butter and cut into halves. Place on a baking sheet and bake at 350 degrees for 15 minutes. May substitute neufchatel cheese for cream cheese and bleu cheese for the parmesean cheese. May freeze the roll ups and thaw the amount needed before slicing and baking.
