Chicken Bacon Ranch Casserole

- 2 cups rice
- Water
- 1 Tbs dry ranch seasoning
- 5-6 sliced uncooked bacon, chopped
- 1/2 cup onion, chopped
- 1 can condensed cream of chicken soup
- Milk
- 3 Tbs Dry ranch seasoning
- 1.5 cups shredded cheddar cheese
- 4-5 chicken breasts
- 1 Tbs butter (if needed)
- Salt and pepper
- 2/3 cup prepared ranch dressing (or more)
- Shredded cheddar cheese

Step 1
Preheat oven to 350 degrees.
Steam 2 cups of rice, adding the 1 Tbs of dry ranch seasoning to the water to add flavor.
Add the chopped bacon and onions to a large frying pan and saute until bacon is cooked and onions are translucent.
Generously spray a 9x13 baking dish with nonstick cooking spray.
In the baking dish, whisk together the soup, 1 soup can of milk and the dry ranch seasoning. Add the bacon/onion mixture and the cheese and mix thoroughly.
In the same frying pan, add the chicken breasts. Salt and pepper to taste. Use the leftover bacon grease to sear each side of the chicken. If there is not enough grease, use butter as needed. Cook on each side about 4-5 minutes until browned.
Add the chicken to the baking dish, pressing it down into the rice mixture.
Lightly coat the entire dish with the prepared ranch dressing, adding additional ranch to taste. Sprinkle the top with additional cheddar cheese.
Bake for approximately 40-50 min until rice is bubbly and chicken is cooked through.
