You could use this same recipe and change it to a completely different soup just by changing out the potatoes for chicken, crab, shrimp, oysters. *If you do take out the potatoes then you will need to add a little flour and butter or cornstarch to help thicken the soup, if you want it thickened.

Ingredients

  • 4 4 4 cups chicken broth
  • 4 4 4 cups peeled and cubed potatoes
  • 8 8 8 oz cream cheese
  • 2 2 2 cloves of garlic
  • 1/2 1/2 1/2 teaspoon seasoning salt
  • 1/2 1/2 1/2 teaspoon of paprika
  • 1/4 1/4 1/4 teaspoon white pepper
  • 1/4 1/4 1/4 teaspoon ground red pepper (I leave this out, but great if you like more spicy!)

Preparation

Step 1

1. Combine broth, potatoes, garlic, and spices.
2. Boil on medium heat until potatoes are tender.
3. Smash a few of the potatoes to release their starch for thickening.
4. Reduce to low heat.
5. Add cream cheese.
6. Heat, stirring frequently, until cheese melts.


* To thicken the soup without potatoes, start with 2 Tbsp of flour and 3 Tbsp of butter in the pot. Add broth, garlic, seasonings. Bring to a boil stirring constantly. Turn heat down and add chunked cream cheese and stir until all the cheese is melted. Add cooked, chopped chicken, or crab meat, or shrimp or drained oysters the last few minutes of cooking.

You could also use cornstarch instead of flour if you desire. Cornstarch would be added at the end (mixed with a little water to make a slurry).
