Chicken and Dumplings

Ingredients

  • Dumplings:
  • 1 large chicken, cut up
  • 2 ribs celery, sliced
  • 4 carrots, sliced
  • 1 medium onion, diced
  • 1-14.5 oz. can chicken broth
  • 2 T. dried parsley
  • 2 tsp. chicken bouillon
  • 1 1/2 tsp. salt
  • 1/2-1 tsp. pepper
  • 2 c. flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. milk
  • 4 T. vegetable oil

Preparation

Step 1

Combine chicken, celery, carrots, onion, chicken broth, parsley, bouillon, salt and pepper in a large pan, add enough water to cover chicken. Or cook in crock pot. Cook until done. Remove chicken from bones and return to pan. In a mixing bowl combine dumpling ingredients and mix well to form a stiff dough. Drop by tablespoonfuls into simmering soup. Cover and simmer 15-20 minutes.
