  • 1 Cup white all-purpose flour
  • 3/4 Cup Whole wheat self-rising flour
  • 1 Tbsp Oat bran
  • 2 Tsp Baking powder
  • 1/2 Tsp baking soda
  • Pinch of salt
  • 1/4 Cup packed brown sugar
  • 1 Tbsp Honey
  • 1 Large egg
  • 1 Cup Buttermilk
  • 1 1/8 Cup Blueberries

Step 1

Preheat oven to 350 degrees. Line 10 muffin holes of a muffin pan with muffin liners.

Mix the flours, bran, baking powder, baking soda, and salt together in a bowl and stir in the sugar. Whisk the honey, egg and buttermilk together in a pitcher.

Pour the wet ingredients into the dry and stir briefly to combine. Don't overmix-the batter should still be a little lumpy. Fold in the blueberries.

Spoon the batter into the paper cases and bake in the preheated oven for 20 minutes until risen and lightly browned.

Remove the muffins from the oven and let cool in the pan. Serve warm or cold.
