Smoked Turkey and Sweet Potato Soup

Smoked turkey is full of flavour and stays tender and moist when cooked in a slow cooker. Simmering it on the bone creates a delicious broth.
Ingredients
- 1 smoked turkey leg (about 18 oz/510 g)
- 1 smoked turkey thigh (about 18 oz/510 g)
- 3 sweet potatoes (2 lb/900 g total), peeled and chopped
- 2 onions chopped
- 1 rib celery chopped
- 2 cloves garlic minced
- 1 1/2 teaspoon Cajun seasoning
- 6 cups water
- 1 tablespoon cider vinegar

Step 1
Trim fat from turkey. In slow cooker, combine turkey, sweet potatoes, onions, celery, garlic and Cajun seasoning; pour in water.
Cover and cook on low for 6 to 8 hours. Transfer turkey to cutting board; let cool slightly.
Transfer 3 cups of the soup to blender; purée until smooth. Return to slow cooker; stir in vinegar.
Remove and discard skin, bones and fat from turkey. Shred or chop meat and return to soup.
