Cookies, Molasses Sugar

Here’s another recipe that reminds me of fall. They are easy to make, rich and gingery. You can find molasses at La Naturaleza (not too far from the Baptist Hospital )---it is extremely inexpensive!

Ingredients
- ¾ cup shortening
- 2 teaspoon soda
- 1 cup sugar
- 2 cup flour
- ¼ cup molasses (find this at La Naturaleza health food store)
- ½ teaspoon ground cloves
- 1 egg
- 2 tablespoons finely grated fresh ginger (use a microplane grater for this)
- 1 teaspoon cinnamon
- ½ teaspoon salt
Preparation
Step 1
Melt shortening, remove from stove and let cool. Add sugar, molasses, egg, and beat well. Sift flour, soda, cloves, ginger, cinnamon and salt and add to first mixture. Chill for 2 hours in the refrigerator.
Form into 1” balls and roll in granulated sugar. Place on greased cookie sheet about 2” apart. Bake 8 to 10 minutes at 375 degrees.
