Ingredients

  • Cake:
  • 1 stick butter softened
  • 1 1/4 cups date, chopped
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 tsp. ground cardamom
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • pinch of salt
  • Frosting:
  • 6 tbsp. butter
  • 1 1/4 cups powdered sugar
  • 1 tsp. instant coffee granules
  • 1 tbsp. boiling water

Step 1

Butter a loaf pan and line with parchment. Pre heat oven to 350F
Place dates in pan with 1 cup water and bring to boil over low heat, stirring occasionally. When dates disintegrate into a soft paste, take off heat and set aside.
In a mixing bowl, cream butter and sugar then add eggs, one at a time. Fold in flour, baking powder, salt and spices, add date mixture and blend well.
Pour into loaf pan, place in center of oven, for 45 minutes, or until skewer comes out clean.
Leave cake in tin to cool before removing.
To make frosting, mix coffee granules with a tbsp. water only. ( more water will make it too thin).Add butter and sugar and whisk until creamy.
Smooth frosting over cooled cake.
