Ingredients
- 2 tbl oil
- 1 1/2 cups chopped onion
- 2 cups chopped carrots
- 1 1/4 cups chopped celery
- 4 cloves minced garlic
- 4 cans vegetable broth 15oz
- 2 cans diced tomato with juice 15oz
- 3 cups chopped potato
- 1/3 cup fresh parsley
- 2 bay leaves
- Salt and pepper
- 1 1/2 cups green beans
- 1 1/4 cups corn
- 1 cup peas
Preparation
Step 1
Heat oil, add onions, carrots, and celery sauté 3-4 minutes add garlic for 30 sec more.
Add broth,tomato,potato,parsley,bay leaves,salt and pepper.
Boil add green beans reduce heat and cover 30 minutes.
Add corn and peas 10 more minutes.
