Ingredients

  • 1 cup flour
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/4 t. salt
  • 4 T. butter, softened
  • 2/3 c. sugar plus 1 1/2 T
  • 1 large egg at room temperature
  • 1 t. vanilla extract
  • 1/2 cup buttermilk at room temperature
  • 1 1/4 cup berries, plus more for serving (blueberries, strawberries or raspberries)
  • Confectioner’s sugar
  • Whipped cream for serving

Step 1

Preheat oven to 400”. Butter a 9 inch round cIake pan and line the bottom with parchment paper. Butter the paper. Mix, the flour, baking powder, baking soda and salt, set aside. Beat the butter with the 2/3 cup sugar until fluffy. Beat in the egg and vanilla. At low speed beat in buttermilk. Add flour mixture in 3 alternating batches. Put batter in buttered pan. Press the berries into the top. Sprinkle with remaining 1 ½ T. sugar. Bake 25-30 minutes until tested inserted indicates the cake is done. Let cool in pan 10 minutes. Remove cake from pan, turn right side up and cool. Dust with confectioner’s sugar and serve with whipped cream.
