Ingredients

  • 1/2 cup diced leek
  • 1 teaspoon minced fresh ginger
  • 2 tablespoons unsalted butter
  • pinch cumin
  • salt and pepper to taste
  • 2 quarts chicken broth
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 cup diced Spanish onion
  • 1 tablespoon minced fresh garlic
  • 2 cups diced chicken
  • 1 bay leaf
  • pinch of oregano
  • zest from 1/2 lemon
  • 9 ounce container fresh cheese ravioli or your favorite pasta

Preparation

Step 1

Start with a large stockpot at medium heat.

Next, add the butter and allow the butter to melt.

Add the chicken to the butter. Cook the chicken, stirring occasionally until fully cooked then add all the ingredients except for the pasta, lemon, parsley and chicken broth.

Sweat these ingredients together at medium heat until the onions are translucent. This will take around 5 minutes.

Next, add the chicken stock to the vegetables and chicken.

Bring the mixture to a simmer. Simmer for 10 minutes.

Add the cooked cheese ravioli or your favorite noodles and lemon zest.

Season the soup with salt and pepper and serve. Garnish with fresh parsley. Serves 6-8
