Apple Cinnamon Jelly

Ingredients

  • 2 3/4 cup apple juice
  • 5 2/4 cups sugar
  • 4-6 large cinnamon sticks (broken into pieces)
  • 1 box fruit pectin
  • 1/2 tea. butter

Preparation

Step 1

Pour apple juice into a 6 or 8 qt. pot. Place sugar in a separate bowl, set aside.

Into apply juice stir cinnamon stocks, fruit pectin, and butter (to prevent foaming). Bring mixture to a rolling boil over high heat, stirring constantly. Quickly add sugar to juice and return to full rolling boil for 1 minute, stirring constantly.

remove from heat. Skim off any foam and remove cinnamon sticks.

Pour into hot jars. Add lids and process in boiling water bath for 10 minutes.
