Mexican Spoon Bread

  • 1 (16 oz) can cream style corn
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cup yellow cornmeal
  • 1/2 tea. baking soda
  • 1 tea. salt
  • 1 (4 oz) can chopped green chiles
  • 2 cups shredded cheddar cheese

Preparation

Step 1

Combine the corn, milk, oil, eggs, cornmeal, baking soda and salt in a mixer bowl. Beat until well mixed. Pour 1/2 of the mixture into a buttered 1 1/2 qt. casserole. Sprinkle green chiles and 1 cup of the cheese over the corn mixture. Spoon the remaining corn mixture over the cheese. Top with remaining cheese.

Bake at 400 degrees for 45 minutes or until puffed and golden.
