Chocolate Peanut Butter Marshmallow Pudding Cookies

It’s like a rich chocolatey, peanut buttery cookie all rolled into one! Then, for good measure, I added chocolate chips and chopped Peepsters. They’re like a chocolate fluffernutter cookie!

Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup peanut butter
- 1 small box chocolate pudding (3.4-3.9 ounces)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 1/2 cups flour
- 25 (1 package) Peepsters Chocolate covered marshmallows (available at Easter and Christmas), each cut in half
- 1 cup chocolate chips
Preparation
Step 1
Cream butter, peanut butter, and sugars in the bowl of an electric mixer fitted with the paddle attachment. Add pudding mix and blend until combined.. Add eggs and vanilla and beat until combined. Mix in baking soda and flour. Stir in chocolate chips and cut up Peepsters. Chill dough for at least 30 minutes.
When ready to bake, preheat oven to 350 degrees. Line cookie sheets with parchment paper.
Scoop one tablespoon balls of dough and place on cookie sheet. Bake 7-9 minutes until the outside just looses it’s glossy un-baked look. Cool for 5 minutes before moving to a rack to cool completely. Cookies can be frozen for later consumption, if desired. Place in a ziploc bag between layers of paper towel for best results when freezing.
