Amish Macaroni Salad

  • Dressing:
  • 4 c. uncooked elbow macaroni
  • 6 hard cooked eggs, chopped
  • 2 small onions, chopped
  • 6 stalks celery, chopped
  • 2 small red bell peppers, seeded and chopped
  • 1/4 c. dill pickle relish
  • 4 c. Miracle Whip
  • 1/4 c. + 2 T. yellow mustard
  • 1 1/2 c. white sugar
  • 1 T. and 1 1/2 tsp. white vinegar
  • 1/2 t. salt
  • 1 1/2 tsp. celery seed



Step 1

Bring a pot of lightly salted water to a boil. Add macaroni and cook until al-dente. Drain and set aside.
In a large bowl, stir together eggs, onion, celery, red pepper and relish. In a small bowl, stir together the Miracle Whip, mustard, sugar, vinegar, salt and celery seed. Pour over vegetables and stir in macaroni until well blended. Cover and chill.
