Flank Steak Pinwheels

Flank steak stuffed with roasted red peppers and spinach and wrapped up with bacon, served with blue cheese sauce.

Ingredients
- 8 bacon strips
- 1 beef flank steak (1 1/2 pounds)
- 4 cups fresh baby spinach
- 1 jar (7 ounces) roasted red peppers, drained
- Blue Cheese Sauce
- 1 package cream cheese
- 1/2 cup milk
- 1 tablespoon butter
- 1/4 teaspoon pepper
- 1/2 cup crumbled blue cheese
Preparation
Step 1
Place bacon on a microwave safe plate lined with paper towel. Cover with another paper towel and microwave for 2 - 3 minutes until partially cooked.
Meanwhile, cut steak horizontally from a long side to within half an inch of the opposite side. Open meat so it lies flat and cover with plastic wrap. Flatten to a 1/4 inch thickness.
Remove plastic wrap and cover steak with spinach to within 1 inch of edges, top with roasted red peppers. With the grain of the meat going from left to right, roll up jelly roll style. Wrap bacon strips around steak and secure with wooden skewers or toothpicks. Slice the beef across the grain between the bacon slices into 8 pieces.
Grill, covered, over medium heat for 5-7 minutes on each side until reached desired doneness.
In a small saucepan, combine the cream cheese, milk, butter and pepper. Cook and stir over low heat until just smooth, do not boil. Stir in blue cheese.
