Creamy Chicken, Bacon and Mushroom Pasta

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • salt and pepper
  • 1/2 tsp paprika
  • 6 thick slices bacon, cubed and cooked till crisp
  • 3 garlic cloves, minced
  • 2 cups sliced fresh mushrooms
  • 1 tomato, diced
  • 1 1/3 cup half and half
  • 1 1/3 cup Parmesan cheese
  • 16 oz whole grain pasta
  • Fresh basil and chopped tomatoes for garnish

Instructions
Warm olive oil in a large pan over medium heat. Season chicken breasts with salt, pepper and paprika. Add to pan and sauté until cooked through and no longer pink in the middle. Remove from pan, slice and set aside.
Bring a pot of salted water to a boil, add whole grain pasta, and cook according to package instructions. Once cooked, drain.
In the same pan the chicken was cooked in, add garlic, mushrooms and tomatoes, adding a little more olive oil, if necessary. Sauté over medium heat until soft, then add chicken and bacon back in. Pour in half and half and bring to a boil. Add in Parmesan cheese, remove from heat, and stir well.
