Chile Cheese Cubes

Ingredients

  • 8 eggs
  • 1/2 cup flour
  • 1 tea. baking powder
  • 3/4 tea. salt
  • 1 (12 oz) pkg. grated Monterey Jack cheese
  • 1 1/2 cups small curd cottage cheese
  • 2 (4 oz) cans mild green chiles,drained, seeded and chopped

Preparation

Step 1

In a large mixing bowl, beat eggs until light (4-5 minutes). Stir together flour, baking powder and salt. Add to eggs, and mix well. Fold in cheese can chiles. Turn into greased 9x9 baking dish.

Bake at 350 degrees for 40 minutes. Remove from oven and let stand for 10 minutes. Cut into small squares, and sere hot.

Yield: 36-48 appetizers
