Ingredients
- 2 lbs potatoes cooked
- 1/2 cup cider vinegar
- 1 medium onion, chopped
- 5 strips bacon, cooked crisp and crumbled, drippings reserved
- 1/2 cup fresh parsley, chopped
- salt and pepper to taste

Step 1
Slice potatoes while they are still warm and place in large bowl. Sprinkle with vinegar and set aside. Cook onion in bacon drippings until soft. Add bacon and parsley, season with salt and pepper. Serve warm or at room temperature.
