Old Bay Shrimp Rolls and Zucchini Fries

Ingredients

  • 1/2 pound cooked medium shrimp
  • 1 cup sliced celery
  • 1/3 cup reduced-fat mayonnaise
  • 2 teaspoons lemon juice
  • 1 teaspoon chopped fresh tarragon
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 2 medium zucchini
  • 2 beaten egg whites
  • 1 cup panko
  • Salt
  • Pepper
  • 4 split-top buns

Preparation

Step 1

Cut shrimp into large chunks. Combine with celery, mayonnaise, juice, tarragon, mustard and seasoning. Refrigerate. Cut zucchini into 2 x 1/2-inch sticks. Dip in egg and coat in panko. Roast at 450 degrees for 25 to 30 minutes, turning once. Season with salt and pepper, if desired. Divide shrimp mixture equally among buns and serve with zucchini fries on the side.
