Savory Rice and Ham

Ingredients

  • 2 teaspoons  olive oil
  • 1 red bell pepper -- finely chopped
  • 1 large  onion -- finely chopped
  • 2 cloves  garlic -- minced
  • 1 cup  long-grain rice -- uncooked
  • 1/2 teaspoon  dried oregano
  • 14 1/2 ounce can  fat free chicken broth
  • 14 1/2 ounce can  stewed red ripe tomatoes and juice
  • 1/4 teaspoon  red pepper flakes
  • 2 cups  ham -- diced
  • 2 tablespoons  cilantro -- chopped

Preparation

Step 1

In a large non-stick skillet, heat olive oil.  Add bell pepper, onion and
garlic, cook 3 minutes or until softened.  Stir in rice, oregano and broth.
Cover, simmer 15 minutes. Stir in tomatoes and juice, pepper flakes and ham.
Cover and simmer, stirring occasionally, 5 minutes or until rice is tender
and liquid is absorbed.  Spoon into large serving dish and Sprinkle with
cilantro
