Ingredients
- 2 teaspoons olive oil
- 1 red bell pepper -- finely chopped
- 1 large onion -- finely chopped
- 2 cloves garlic -- minced
- 1 cup long-grain rice -- uncooked
- 1/2 teaspoon dried oregano
- 14 1/2 ounce can fat free chicken broth
- 14 1/2 ounce can stewed red ripe tomatoes and juice
- 1/4 teaspoon red pepper flakes
- 2 cups ham -- diced
- 2 tablespoons cilantro -- chopped
Preparation
Step 1
In a large non-stick skillet, heat olive oil. Add bell pepper, onion and
garlic, cook 3 minutes or until softened. Stir in rice, oregano and broth.
Cover, simmer 15 minutes. Stir in tomatoes and juice, pepper flakes and ham.
Cover and simmer, stirring occasionally, 5 minutes or until rice is tender
and liquid is absorbed. Spoon into large serving dish and Sprinkle with
cilantro
