Carrot Cookies with Pecans and Maple

Ingredients

  • 2 cups traditional oats
  • 1 cup plain flour sieved
  • 1 cup self-rising flour sieved
  • 1 1/3 cup raw sugar
  • 1 cup pecans finely chopped
  • 150 g grated carrot ( 1 large carrot )
  • 150 g butter cubed and softened
  • 1 large egg, room temperature
  • 1/3 cup maple syrup
  • 2 tsp vanilla essence

Preparation

Step 1


Yield – 40 cookies

Preheat oven to 175C

Place all ingredients in a bowl of a mixer or any large bowl and mix well making sure there are no lumps of butter left.

Place each cookie ball on a prepared tray leaving about 2cm distance between each ball.

Bake in a preheated oven for 15 minutes or until golden.
