Ingredients
- 2 large garlic cloves, minced
- 1/4 cup soy sauce
- 1/4 cup water
- 1/4 cup honey
- 1 tablespoons coconut oil, melted
- 1 tablespoon cornstarch
- 1/4 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes or 1/2-3/4 teaspoon Sambal Oelek
- 1 lb boneless skinless chicken breast, cut into strips
- 1/4 cup green onion, chopped
- 1/2 Bag Frozen Chinese Vegetables
- 1-2 T. High Heat Oil (Safflower, Peanut, Almond)
- DOUBLE SAUCE PLACE IN 2 SEPARATE BOWLS

Step 1
Combine garlic, soy sauce, water, honey, coconut oil, cornstarch and black/red pepper (or Sambal Oelek). Stir chicken into one bowl to marinade and mix to coat, reserve other bowl of marinade.
Cover and refrigerate chicken at least 2 hours, stirring once to twice.
In large skillet, heat safflower oil.
Stir fry frozen vegetables until crisp tender, remove to platter.
Using slotted spoon, transfer chicken to skillet (discard marinade). Stir-fry about 5 minutes or until cooked through. Add reserved marinade; continue to cook and stir about 30 seconds until thickened, add cooked vegetables.
Remove to platter. Garnish with green onion. Serve over brown rice.
