Erdapfelsalat (German Potato Salad)

Ingredients

  • 2 pounds waxy potatoes
  • 1/2 cups beef broth
  • 5 tablespoons of vegetable oil
  • 1 pinch of salt
  • 1 pinch ground white pepper
  • 3 tablespoons white wine vinegar
  • 2 teaspoons granulated sugar
  • 1 red onion
  • 1 tablespoon tarragon mustard
  • 1 cut bunch chives

Preparation

Step 1

Cut onion into small dice.

Cook potatoes until soft in saltwater. Peel the potatoes while still warm and cut into 1/8 inch slices.

For the marinade wisk broth, oil, salt, pepper, vinegar, and sugar together.

Mix lukewarm potatoes with chopped onion chives and marinade.

Leave set for 15 minutes.
