  • 1 1/4 cups butter cubed
  • 1/3 cup ice water

  • 1/2 cup sugar 1/4 tsp grated lemon peel
  • 1/4 cup brown sugar 1/2 cup apple cider
  • 1/2 tsp salt 1 Tbsp lemon juice 1 tsp vanilla 1 large egg yolk 1 Tbsp heavy cream

Pulse flour, sugar and salt in food processor until bended. Add butter, pulse until butter size of peas. While processing add just enough ice water to form crumble. Divide dough in half unto disk wrap in plastic and refrigerate 30 minutes or over nite,
2. Meanwhile melt butter in Dutch oven over medium heat, Add apples and nest 6 ingredients.
Cook covered stirring occasionally until apple have softened and released their juices .10-12 minutes. With slotted spoon transfer into 15x10 pan,spread into single layer. Add cider to remaining liquid and bring to boil reduce to 1/2 cup 10-12 minutes. Remove from heat add lemon juice and vanilla. Pour over apple slices. Cool Completely
Roll out dough add filling Whisk together egg yolk and cream. Brush on top dough. chill 15 min.
Bake 20 min reduce from 425 to 350 40-45 minutes Cool
