Sausage/Egg/Potato Breakfast Casserole

Ingredients

  • 2 lb. bulk pork sausage (any variety)
  • 1 c. bell pepper, chopped
  • 11/2 c. onion, chopped
  • 3 cups O'Brien hash browns (with onions and peppers)
  • 4 cups cheddar cheese, shredded
  • 1 cup original Bisquick mix
  • 2 cups milk
  • 1/2 tsp pepper
  • 4 eggs

Preparation

Step 1

Heat oven to 400. Grease 13x9x2 inch baking dish. Cook sausage, bell pepper and onion in skillet over medium heat, stirring occasionally, until sausage is no longer pink; drain. In large bowl, stir together sausage mixture, potatoes and 3 cups of the cheese. In a separate bowl, stir Bisquick mix, milk, pepper and eggs until blended. Add to sausage/potato mixture. Pour into baking dish. Bake uncovered 40 to 45 minutes, or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer, or until cheese is melted.
