Smoked Sausage, Green Beans & Potato Skillet with Balsamic Glaze (Hoosier Stew)

Ingredients

  • 1/2 Pkg Smoked Sausage ( cut
  • into pieces)
  • 14 oz (about 12) Fingerling
  • Potatoes, halved
  • 1 tsp salt
  • 1 Tbsp olive oil
  • 1 Onion, cut into thin wedges
  • 1 Bell Pepper (cut into thin
  • slices)
  • 1/4 tsp black pepper
  • 1 - 8oz can cut green beans,
  • drained (used fresh &
  • steamed ahead of time)
  • 1 Tbsp Balsamic Vinegar

Preparation

Step 1

Place potatoes and 1/2 t sp of salt in 3 qt saucepan. Cover with 2 inches of water and bring to a boil.

Step 2

Reduce to a simmer and cook for 10 minutes, or until potatoes are tender. Drain.

Step 3

Meanwhile, in a large skillet heat oil over medium high heat. Add the onion and bell pepper; cook 5 to 6 minutes or until crisp tender, stirring occasionally. Add potatoes, sausage, the remaining 1/2 tsp of salt & the black pepper; cook & stir 4 to 5 minutes or until heated thru.

Step 4

Stir in canned green beans or fresh ones that have been steamed; heat 1 to 2 minutes.

Step 5

Drizzle the balsamic vinegar across the top of the skillet before serving.

You can substitute fingerling potatoes with 14oz (3/4 of a pkg) of frozen red potato wedges, prepared per the instructions on the package.
