Ingredients
- 3 medium ripe bananas
- 2 cups gluten-free oatmeal
- 2 large eggs
- 1/3 cup pure maple syrup
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- pumpkin seeds
- sunflower seeds
- Substitute 1-1/2 cups pumpkin for 3 bananas. Add 1 teaspoon pumpkin pie spice.
Preparation
Step 1
1.Preheat oven to 350°F. Lightly grease 9x5-inch loaf pan with non-stick cooking spray and set aside.
2.Add all ingredients to a large bowl and mix until until smooth and well combined. Pour batter into prepared loaf pan. Garnish the top of the batter with pumpkin seeds and sunflower seeds. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
3.Let loaf cool completely in loaf pan. Store bread in an airtight container in the refrigerator.
