Ingredients

  • 1 onion chopped
  • 1/4 cup olive oil
  • 2 diced carrots
  • 2 celery stalks chopped
  • 2 garlic cloves minced
  • 1 t oregano
  • bay leaf
  • 1 t basil
  • 1 can crushed tomatoes
  • 2 cups dry lentils
  • 8 cups water
  • 1/2 cup spinach, sliced
  • 2 T vinegar
  • salt and pepper

Preparation

Step 1

In a large soup pot heat oil. add onions, carrots and celery cook till tender. stir in garlic, bay leaf, oregano and basil, cook for 2 minutes.

stir in lentils and add water and tomatoes. boil and reduce and simmer for at least an hour.

when ready to serve add spinach and cook till wilts. stir in vinegar and salt and pepper.
