***Baked Alaska Pie -- Template

This is our traditional Christmas dessert. Sometimes I add Caramel or another sauce in between the ice cream layers. There are SO many ways to have fun with this!

Ingredients

  • Crust:
  • 2 - 1/2 gal. ice cream, softened - different flavors
  • 4 egg whites
  • 1/4 tsp. cream of tartar
  • 6 tbsp. sugar
  • 1 tsp vanilla
  • 1 package chocolate wafer cookies finely ground in processor
  • 1/4 c. melted butter

Preparation

Step 1

Crust:
Position rack in center of oven; preheat to 350°F.
Blend cookie crumbs and sugar in processor. Add melted butter; process until crumbs are evenly moistened. Press crumb mixture onto bottom and up sides (not rim) of 9-inch-diameter glass pie dish.
Bake for 10 minutes. Remove and cool.
Spoon in softened ice cream, mounding a bit in the center.

Meringue:
Beat egg whites and cream of tarter until frothy. Beat in sugar, one tablespoon at a time; continue beating until stiff and glossy. Do not under beat. Beat in vanilla.
Spread over ice cream - making center a little higher than the sides. Be sure meringue completely covers ice cream at the sides.
Bake in 450 degree oven just until the meringue is slightly toasted.
