Roasted Pears with Butterscotch Sauce and Pistachios

Ingredients

  • 2/3 c heavy cream
  • 1/2 c packed brown sugar
  • 4 T butter plus 1 T melted butter
  • 2 t scotch whiskey
  • 2 pears halved and cored
  • 1/2 c chopped pistachios

Preparation

Step 1

In sauce pan, whisk cream, sugar, 4 tablespoons butter, Scotch, and 1/2 teaspoon salt over low until sugar dissolves. Simmer until thickened, about five minutes. On foil lined baking sheet, arrange pairs, cut side up. Brush with 1 tablespoon melted butter. Broil until browned in spots, about five minutes. Drizzle pears with butterscotch sauce. Top with pistachios.
