Ingredients
- 6 cups chicken stock
- 1 lbs. chicken meat, cooked
- 3 eggs, beaten
- 3 lemons, juiced
- 1 tbsp. corn starch
- 1 cup white rice
- salt
- pepper
Preparation
Step 1
Heat stock in large pot to simmer.
Add rice and chicken and continue to simmer
In large bowl whisk the eggs and slowly add lemon juice. Add corn starch to thicken.
Ladle some hot stock into egg mixture and continue whisking. Slowly add more stock until egg mixture is fully heated. Pour egg mixture in with the stock / rice / chicken and slowly heat. Season to taste with salt and pepper
